Chocolate persimmon cupcakes
Ingredients
3/4 cup plain white flour
3 tbsp cocoa powder
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 egg
1 cup persimmon pulp
3 tbsp unsalted butter, cold and cubed
1/4 cup brown sugar
1/4 cup caster sugar
Chocolate chips
Protocol:
1. Sift and mix all dry ingredients in a bowl
2. Cream butter and sugar until light and fluffy (2-3 minutes)
3. Add egg in and mix well
4. Add persimmon pulp. Mix.
5. Add dry ingredients in batches and mix evenly
6. Add chocolate chips and stir through
7. Grease muffin pan and pour batter till 3/4 full
8. Bake in oven at 180C for 20 minutes
